That’s exactly the story behind our very own Winter Creek Red, which we’ve just finished bottling after 18 months in barrel — and it’s safe to say, it was worth the wait.

We first put this batch of Winter Creek Red into barrels a year and a half ago, curious to see how extended aging would shape the character of the wine. There was no rush — just a desire to explore, experiment, and perhaps uncover something special.

As it turns out, letting the wine take its time was exactly what it needed. The result? A smoother, more rounded drop with subtle notes that have come into their own with a bit of age. The edges have softened, the flavours have deepened, and the finish lingers just a little longer — the kind of wine you want to savour, not rush.

A Wine Worth Sharing

Bottling day brought with it a sense of pride and celebration. There’s something truly rewarding about taking something from barrel to bottle, especially when it’s been quietly evolving behind the scenes for so long. And as always, it was a community moment — with curious noses in the air, corks popping, and plenty of discussion about flavour, aroma and how best to enjoy it (with cheese? by the fire? both?).
